ஆட்டுக்கால் பாயா

Attukal Paya Recipie for 1 attukal ( 2 legs will be there): 1 set attukal should be rinsed in water thoroughly ( see to that it is sutta kaal which we can cook directly, if not then the process is tedious), 2 onion, 2 tomatto, 3-4 spoons of malli/ Dhania vidai, 5 nos dried red chilly, 3-4 green chillies, 1 big piece or 25 grams of ginger, 50 grams of garlic, 2-3 spoons of pepper depends on you spice level, curry and coriander leaves, 1/2 moodi coconut scraped and taken milk. Preparation: Usually the attukal should be bought previous day night, clean the attukal thouroughly add enough amount of water and pressure cook it for atleast 30 minutes. switch off the fire and keep aside for the whole night. Next day saute the Dania, red chilly, pepper with little oil and keep aside, 1 onion cut into pieces, 1 tomato cut into peices, ginger, garlic, green chillis saute in oil and keep it for cooling. First powder the dania, redchilly and pepper and then add the remaining ingredients and make it into a nice paste. Take the coconut milk. Take a wide mouth vessel, add oil, add cinnamon, cloves, annachi poo, after it splitter add the remaining onion fry it and add the tomoatto once it is done, add the attukal and nicely saute and add the soup of attukal into it and make it to slightly boil and add the grinded masala and add salt, check the attukal has cooked soft if not again keep it for 3 to 4 whistles, once it is nicely boiling add the coconut milk and make it to boil for 5 minutes and sprinkle the coriander leaves here your attukal paya is ready. If it is soup you no need to add Daniya and coconut milk and no need to add the onion and tomato paste, the preparation is same like other soups only. Before adding coconut milk to the paya just check the spice and salt if the spice is less you can add pepper powder or chilly powder according to your spice level and make it to boil for one more time and then add the coconut milk.
